Meghan Markle Adds This $3 Italian Pantry Staple to Her Breakfast to Make It 100x Better
Meghan, Duchess of Sussex, is no stranger to being in the kitchen — whether she’s making her famous zucchini Bolognese or using her love for cooking to help communities affected by the Grenfell fire. In fact, one of her first jobs was working at a frozen yogurt shop in Los Angeles. So if you’ve been following Meghan’s journey, it’s no surprise that her next step is sharing her culinary secrets with viewers on her new Netflix series, With Love, Meghan.
If you haven’t checked out With Love, Meghan yet, episode two is a must-watch for anyone seeking quick and easy cooking tips. In this segment, Meghan walks viewers through one of her go-to breakfast dishes: a frittata. But she doesn’t stop there — she also adds a special jarred Italian ingredient to elevate the eggy delight even further.
“Let’s get those peppers in there,” she says in the episode, as she grabs a jar of roasted red peppers. “These are marinated red peppers, so you get great color but no heat.” She then mixes the Italian staple directly into the egg batter of her frittata before baking.
So, what are marinated red peppers? They’re exactly what they sound like — red peppers soaked in olive oil and infused with aromatics like garlic. Some are fire-roasted for a smoky flavor, while other brands might add a tangy vinegar or Italian spices for extra flavor.
You can find marinated red peppers at most grocery stores, with prices usually ranging from $3 to $9 per jar.
Beyond the addition of the marinated red peppers, the frittata recipe is pretty simple. Meghan starts by sautéing onions, zucchini, and peppers (although you can use any veggies or add-ins you like), then pours in whisked eggs. Before baking, she tops the frittata with marinated red peppers, everything bagel seasoning, arugula, and goat cheese, which is her personal favorite combo. She bakes it at 350°F for 15 to 20 minutes.
“I wake up every morning, and I really take a lot of pride in making breakfast for my family,” she says. But she also admits that “mornings are fast,” which is why she turns to quick and easy recipes. With her simple marinated red pepper hack, she shows that even when you’re in a rush, you don’t have to sacrifice flavor.
