I Tried the Viral 3-Ingredient “Egg Bake”
Is there anything more relatable than getting home after a long day of work and being too lazy to cook? Despite the massive empty hole that is the “post-work appetite,” some days are just a little bit harder than others to whip out the pots and pans and dive right into an intensive recipe. And when eating out is completely out of the question, all that is left is our ability to rise up against all odds and start getting creative in the kitchen.
I recently came across a “Simple Breakfast Bake” made by one of my favorite creators, Jenna Hunter, a.k.a. The Healthy Hop Head, that instantly caught my eye. Hunter advertises this recipe as being perfect for when you are too tired to cook, but still need to eat, which is something I have zero issues identifying with.
I was already inspired by the simplicity of the recipe, not to mention its use of three of my favorite foods in existence: eggs, cheese, and bacon. I needed no more convincing, and it took less than the 8-second length of Hunter’s video to convince me that this recipe was right up my alley. Here’s how it went.
How to Make the Simple Breakfast Bake
To begin, preheat your oven to 350°F and add 1 tablespoon of olive oil to an oven-safe baking dish. Depending on the size of the dish, crack at least 2 or more eggs inside, then top with shredded cheddar cheese, bacon bits, green onion, salt, and pepper. Once the oven is preheated, place the baking dish inside on the center rack and bake for at least 20 minutes, or until the eggs are cooked to your liking.
When ready, remove the dish from the oven and set it aside to cool slightly before serving. Remember, the egg will continue to cook after removing the dish from the oven, so keep an eye on both your eggs and the timer during the baking process. Serve warm, garnished further with more cheese and bacon bits, or any other toppings of your choice.
My Honest Opinion of the Simple Breakfast Bake
Truth be told, as I watched The Healthy Hop Head’s video set to Fleetwood Mac’s The Chain, I knew right away that I was going to be in love with this simple breakfast bake. Eggs are by far one of my favorite foods and I have always enjoyed learning new ways to prepare them. Sure, I can admit that baking eggs is nothing new, but what really caught my attention was this recipe’s ability to keep it simple.
This no-thrills, no-nonsense approach to breakfast is exactly what I could use on those days when I’m just too tired to cook but still need to whip something up so as to avoid ordering takeout. I’ve already found myself taking note of a few ideas for next time, like using chunkier pieces of thick-cut bacon and adding some peppers and onion on top as well.
The potential for experimentation is off the charts with this one, and there is nothing more enjoyable than a recipe that is both simple by design and inviting to expand upon. You know the recipe is a keeper when there’s only five minutes of prep time and a mere 20 minutes of cooking time in which all you need to do is sit around and wait. Breakfast couldn’t have gotten any lazier, and I am absolutely here for it.
