I’ve made this a few times without issue. It may have been if your turkey was on a roasting pan that was on a rack so that extra air circulated on the bottom. My husband and I were on our own since we couldn’t be with family. I used this recipe (doubled the maple, herb butter recipe because it was a larger turkey).
