Reliving the butter chicken origin story

The best meal that I had in my recent trip of Gurgaon was the dinner that I had at the Daryaganj Restaurants outlet at Ambiance Mall. I had the ‘original’ butter chicken, which had a rustic roughly chopped tomato base and not a smooth purée one. It had less cream than the norm. They have a modern version too. I was in awe of how tender the breast pieces of chicken were. I had the ‘original’ ma ki dal. It was soft and silken like a dream and felt so nourishing. Again ‘original’ meant that it had less cream than the norm.

‘Original’ refers to what was served by the late Kundan Lal Jaggi in his eatery in Daryaganj in Delhi. This was in the years following independence.

The modern restaurant chain is run by his grandson, Raghav Jagii and his business partner, Amit Bagga. It aims to take ahead the legacy of Kundan Lal Jaggi who apparently was the inventor of butter chicken and mah ki dal.

How do I know all of this? It’s all thanks to the menu card. I loved the way that the restaurant had created a story around its brand. What a lovely way of taking the legacy ahead.

This made the experience feel even more special. Took one away from the mall setting around one to a more romantic land. We need to see more such examples of legacy restaurants building their brands to stay contemporary.

And mind you, it was not empty talk. The food was amazing too. I was in a hurry to catch a flight and I could not relish it as much as I would have loved to. I would definitely like to go back.

Ps: The chhas was lovely too. #dal #butterchicken #gurgaonfinelychopped #finelychoppedtravels
