You could also double this recipe for a crowd. This salad was always on my Mother’s table on any occasion and is one that most people love. It makes a great salad for St. Patrick’s Day because of the green color. This salad is a good choice to take to gatherings, serve on a buffet table or even make it for a sick friend or neighbor. My family asks for this one all the time and not just on holidays.

Pistachio instant pudding
Crushed pineapple with juice

Pistachio Salad or Watergate Salad
- 1 8 ounce cool whip
- 1 3.4 box pistachio instant pudding
- 2 cups miniature marshmallows
- 1 20 ounce can crushed pineapple with juice, drained (save 1/3 cup of the pineapple juice and add into recipe)
- 1/2 cup chopped nuts of your choice
- 1 cup shredded coconut
Stir dry pudding mix into cool whip. Add remaining ingredients and mix well. Keep refrigerated.
