COWBOY CAVIAR PASTA SALAD
Cowboy caviar pasta salad is so simple and flavorful. In the summertime, I find myself preparing a ton of pasta salads. I just love how easy they are. You literally toss everything in a bowl and chill, how easy is that? Not only are they the perfect side for any barbecue or family gathering, but they are also a great addition to any easy summer lunch or dinner.

Recipe Notes: If you want a bit of a kick, you could easily add some chopped jalapenos. For a little crunch, you can add a few crumbled tortilla chips right before you serve it.
Tip: One of my favorite meals during the summer is this simple pork tenderloin and a pasta salad. It makes such an easy dinner or lunch for when we’re busy. Plus, we can enjoy it for several days. Another great lunch or dinner option is to make this pasta salad with our crockpot sloppy joes. Easy! Easy!

Cowboy Caviar Pasta Salad
- 3 cups of uncooked pasta we use mini farfalle or elbow
- 1 (15 ounce) can of black beans drained and rinsed
- 1 (15.5 ounce) can of black-eyed peas drained and rinsed
- 1.5 cups of corn drained and rinsed
- 1/2 cup of diced sweet peppers
- 1/4 cup of diced red onion
- 2 cups of Italian dressing
- 1/2 teaspoon of chili powder
- 1/2 teaspoon of garlic powder
- 1/2 teaspoon of cumin
Cook pasta according to the directions on the box. Drain. Mix pasta and all other ingredients together and chill for at least 2 hours before serving.
