As much as I like gravy curries, I like dry curries too, and this aloo gobi tops the list. I love aloo gobi with the humble dal chawal (lentil curry and rice) or with roti. It pairs well with both rice and roti, and that’s how I served it this time.

Do I need an air fryer for this recipe?

From the title, you all would have guessed I made this aloo gobi in the air fryer. But that doesn’t mean that you can’t make this curry without any air fryer. We can very well make this on the stove-top or in the oven too. I love to make aloo gobi in the air fryer or oven as it yields soft and tender and non-mushy curry. 

Today I am going to share how to make this potato and cauliflower curry in the air fryer. When I make this curry in a small batch, I opt for an air fryer, and when I am making it in a big batch, I opt for the oven. I have provided oven timings below; please check the same.

Ingredients required

Potatoes and cauliflower – I prefer gold potatoes or the white ones that we get in Indian groceries, but you can experiment with other varieties. I went with a little over 200 grams of cauliflower florets and 250 grams of potato chopped and peeled for this recipe. I have tried with an equal measure of cauliflower and potatoes too. Make sure you chop both the veggies almost the same size for even cooking.

Oil and salt – We need some oil and salt like any other recipe. One tbsp of oil might sound like a lot, but we need that amount for this measure. You can reduce the measure to 2 tsp but don’t reduce it any further. Adjust the salt to taste. 

Spices – I used red chili powder, turmeric powder, garam masala, and tandoori masala. The tandoori masala adds a nice flavor and makes this dish more like a restaurant-style aloo gobi, and I recommend not skipping the tandoori masala. Adjust the other spice measures to taste. 

Kasoori methi / dried fenugreek leaves: The kasoori methi is yet another critical ingredient that enhances the flavor of this dish. I add them when the aloo gobi is fully cooked and then roast again for enhanced flavor. Like tandoori masala, I highly recommend not to skip this one too.

Dietary specifications and serving suggestions

This aloo gobi is vegan, nut-free, and gluten-free. Make sure the spices that you use are gluten-free.

You can serve this dish with rice and dal or with roti. I served this with rice, methi dal, and roti.

I have stored this dish for a couple of days but not more than that and I have never tried freezing this aloo gobi. Without any further ado, let’s see how to make this curry.

Instructions

  • Preheat the air fryer as per the manufacturer’s instructions. I preheated mine at 370 deg F for 5 minutes. Meanwhile, in a bowl, add the chopped potatoes and the cauliflower florets.

  • Add the oil, salt, red chili powder, turmeric powder, tandoori masala, and garam masala.

  • Mix well and ensure you have coated the spices evenly.

  • Line the air fryer basket with aluminum foil and place the potatoes and cauliflower. Spread them evenly. Air fry at 370 deg F for 14 minutes, shaking once halfway through around 7 minutes.

  • After 14 minutes of cooking, transfer the potatoes and cauliflower into the mixing bowl and add the crushed kasoori methi.

  • Mix well and add it back into the air fryer basket. Now increase the temperature to 400 deg F and air fry for 2 minutes. That’s it, the aloo gobi masala is ready. Serve it hot with rice or roti.

Conventional oven timings

  • Line a baking tray with aluminum foil and add the potatoes and cauliflower coated with spices. Bake it in a preheated oven at 400 deg F for 20 minutes, tossing them once in between.
  • Then add the kasoori methi and bake again for 5 minutes at high broil mode. 

Recipe notes

  • Lining the air fryer basket with aluminum foil helps in easy cleaning. It’s not mandatory to do that.
  • Adjust the spices and salt to taste. 
  • Make sure you coat the spices evenly also and spread them evenly in the air fryer. Do not layer them up, and if the quantity is more, try in the oven or make them in batches in the air fryer.
